It looks pretty simple. You just dance to win. There don't really seem to be any prizes for doing it though.

There's a mysterious man wearing a cloak that completely covers his body and hides him dancing. He's pretty good too. You hear people calling him The Master.

She tries to snatch the cloak, but the man just dances out of the way, still keeping his chain combo of dance. Was that on purpose or was it mere coincidence...?

Harperina cheers on the mysterious dancer, but he seems more interested in the dancing and doesn't pay much attention to her. There are also others cheering him on too, so maybe she's just drowned out by how loud it is in here.

(I don't know if he's actually who I think he is, but if so then I'm onto you. As for who I'm referring to, the fact that Sylvia is watching him should be a clue.)

Forbit depressingly sits on a bench, with his fake dirty non-human robot eyes constantly looking downwards.
Reese looks around for a drinking partner. Or a potential designated non-drinker so she won't have to stumble down some stairs.
Kick walks over to Rose.
"It's certainly been a long time since we've had a moment of peace for ourselves, hasn't it? We should enjoy it while we can. Where would you like to go, dearest?"
Azure: "Look, they have card games here too! We HAVE to go gamble and get rich!"
Cardinal: "The café doesn't make the most money yet, honey..."
Azure and Cardinal will go play the card game.
Indigo: "Bye, mom! Bye, dad! I'm going to head off and relax with some friends now."
Chuchu: "You STILL refer to your parents as 'mom' and 'dad'? Stupid."
Espree: "Never forget your origins. That's what I say."
Chuchu: "PAH. Dumb kids."
They'll all go together and look around for friends or entertaining stuff to do.
Tear will stay at the booth with the attendant lady. "Tell me. How would someone land a job around here?"
Nyro will go find simple joy in playing with the Chocobos while not saving the world.
