They brought out a cannon and some rifles, so that if the team had had no ranged weapons they still would've had a chance.

The hunters begin searching the weapons. Anubis finds the last target just inside the cannon's barrel. It was clearly designed to break when the cannon's used. Rosalin looks at them expectantly to see how they'll do it.

The hunters take some time to load and ready the cannon. The target actually breaks when they load the powder and pack it down, but Rosalin lets them go through with firing the cannon anyway.
"Well, you lot made it look easy. Guess I found myself a few good additions to me crew..." MISSION ACCOMPLISHED

(Congratulations, you reached the video that grew to become this entire scenario)
The hawk-lady calls down from the crow's nest. "Cap'n! Pirates off the port and starboard bows!"
A pair of galleons are faintly visible far off on the horizon, approaching from either side. They're coming up alongside your ship.
"All hands, prepare fer combat! Looks like they're plannin' t' open up with a broadside volley each, then they'll prob'ly come in fer boardin' t' finish us off!" Rosalin orders. The rest of the crew goes running to man the cannons. "Well, hunt'rs, time t' prove yer worth!"
The enemy ships seem nearly identical to your own, though with larger - if less competent-looking - crews. You've got perhaps a minute to set up.

Joanne takes out her harpoon and launches it into the enemy ship's lower area. Holes in ships usually aren't good. Hunter is going to launch some blades at the other ship's sails so it can't move. Anubis will follow that with missiles into the ship's main body. Orus will protect our ship with a powerful, outward wind burst around it.

Are they all going to focus on the same ship, or split between the two? You're being attacked from both sides.

Yeah, they're split. I just probably didn't explain well.
Joanne's attacking the one on the left, Hunter and Anubis are attacking the one on the right, and Orus is playing defense.

(I'm just, uh... trying to remember mechanics from a 20-year-old game...)
Joanne fires a harpoon into the galleon approaching from port. It puts some small holes in the ship just below the waterline. Well... It's a hit. The damage seems kinda negligible.
Hunter fires at the sails of the starboard galleon. The blades shred through the canvas. The ship's speed slows drastically.
Anubis fires a missile at the starboard galleon. It punches a sizeable hole in the ship's side, and a few enemy crewmen are knocked overboard by the blast.
"Starboard volley! Fire!" Rosalin calls. The NPCs fire the starboard cannons. Several balls punch through the enemy ship.
The enemy ships both fire a volley of ships back. Orus launches a powerful gust of wind. The cannonballs from the ship that had been slowed down are slowed enough that most bounce harmlessly off the side of the ship or do minimal damage. The cannonballs on the other side are slowed, but still impact the ship.
"On guard for boarders!" Rosalin says. "Wait... What manner o' thing is..." A strange device appears on the deck of the port ship as it closes in. It looks like some sort of rotating turret. The starboard ship remains at a distance, content to continue using its cannons.

Orus, create a tornado to destroy the ship with the turret!
Time for an all out attack! Anubis, keep the enemies busy, blasting the remaining ship with missiles. Joanne and Hunter, hookshot over there! Hunter will take on the pirate mooks with punches and kicks using his bladed gauntlets and boots. Launch blades at those too far to hit. That should take care of them. Joanne will take down the leader of the ship at the wheel with an electrified hookshot, pulling him in to a headshot with the Crossbones. Then...we should probably hookshot back to our own ship.

Orus summons a tornado around the port ship. The ship sways back and forth dangerously, but it doesn't capsize. It tries to activate its turret, spewing fire at your ship. But the winds catch the flames and whip it into a firestorm around the enemy ship. The enemy ship is on fire. Several members of its crew leap overboard and it begins to retreat, still aflame. Rosalin orders a volley against them as they retreat, giving them a bit more to think about.
Anubis begins barraging the other enemy ship with missiles. It punches a few holes in the side.
Hunter grabs Joanne as she hooks over to the other ship. They leap off and begin fighting. Hunter has little difficulty against single enemies, but begins to get overwhelmed when they attack from multiple angles with their cutlasses and pistols. They land a few lucky hits, but he eliminates an enemy for every wound he takes.
Joanne attempts to identify the enemy commander. The one that seems to be giving orders is not what she expected: a skinny, weak-looking enemy with a mustache. She aims her hookshot at him and fires. The captain reacts with surprising speed, blocking the claw with his sword. The electricity surges through the metal and into him, and he immediately drops the blade.
He yells something in a made-up language, and a parrot flies down and presses a big, red button. Two large holes in the deck open up and a huge balloon comes out. The ship pulls out of the water and begins to rise into the air. That... doesn't even make sense, from a physics standpoint. Why would the balloons not have been lifting the ship while they were below decks?
...Doesn't matter. The water the ship was taking on floods out of the holes in the bottom.
Joanne and Hunter lose their balance for a moment as the ship shoots up.

Balloons...? That's almost too easy.
Orus will give the enemies a boost, moving them upwards with a powerful gust of wind. Then while they're high up, Hunter and Joanne will both leap off the side of the ship. Hunter's going to launch two blades into the balloons, popping them. Joanne will then grab hunter and hookshot back to our ship. Falling from this high should be effective in terms of damage. But just in case...Anubis will launch some more missiles at them.
